Part of my role was buying in casks and actually, many of the ways I learned about spirit and wood was learning about different kinds of spirit and how they interacted with the different kinds of wood all over Scotland, and buying different whiskies. And then in the last probably eight years, we’ve started filling other people’s spirit into our own casks. That’s also been a journey of matching the cask to the spirit type. On the nose, very clean, soft, floral and fruity. The opening notes are of distinct honey, fresh pineapples and ripe red apples, then some notes of orange honeydew melon in the next wave. Not far behind are some light floral notes from chrysanthemum. This feels clean and estery- the aromas are so light and diffuse easily into your nose. Floral notes and notes of soft fruits take over and linger on the palate with more ripe apples, slightly bitter chrysanthemum and a light cucumber taste that is usually associated with “grassiness”.

Last week, we met with Isabella and William Wemyss, the brother and sister team behind Kingsbarns Distillery in Fife, for the launch of Dream to Dram, the duo’s first commercial single malt Scotch whisky release.Records the default button state of the corresponding category & the status of CCPA. It works only in coordination with the primary cookie. Dream to Dram is the first generally available single malt whisky from Kingsbarns Distillery. It follows a limited release of the exclusive ‘Kingsbarns Single Malt Founders Reserve’ for members of the Kingsbarns Distillery Founders Club in December 2018. MoM: There’s quite a lot of distilleries that have opened, do you think there’s a chance that there may be too many at some point? We’ll be raising a glass of Dream to Dram tonight to toast what I’m sure will be a most exciting future for our new whisky as we share it with drinkers around the world.’ The floral and fruity notes really take the centre stage even as they are very gentle. With a few minutes of careful nosing, you might detect some vanilla and slight oakiness, but this is rather subtle and could be missed.Despite a government grant and two years of crowdfunding, the project fell a little short of the amount required and progress stalled. Fortunately though, all was not lost. Clement’s venture had captured the imagination of the brother and sister team of William and Isabella Wemyss and in 2013, they took over the development of the distillery and before too long, spirit was running from a set of newly installed Pot Stills. This bottling, aptly named Dream to Dram, is from some of the earliest casks filled at Kingsbarns. The whisky has been matured in 1st fill ex-Bourbon American Oak casks, and shaved, toasted and re-charred barriques (STR casks). Unchillfiltered and natural colour. Being a fan of blended malts, I’m easily attracted to any new brand I can get my hands on. I’ve lost interest in Compass Box ever since their prices started hiking while the quality of their limited editions started dipping. Douglas Laing’s Remarkable Regional Malts has quenched that thirst. A long, slow production process in copper pot stills is at the heart of distillation: a 3 – 5 day fermentation period, wash stills that run for 8 hours and a slow running spirit still with high cut points. That will never change and the stills will never run any faster.Master Blender Isabella Wemyss has carefully selected a combination of Ex-Bourbon and STR (shaved, toasted and re-charred) ex-Portuguese red wine casks to mature DOOCOT. Full of sweet, fruity character, DOOCOT is light, intensely fruity, floral and complemented by a rich colour coming from the high quality bourbon casks it has matured in. C omprising of the same liquid as our first release Dream to Dram, but undisturbed for a longer oak maturation allowing complexity to develop while maintaining balance, we hope you find the core Kingsbarns spirit still remains firmly within. MoM: Right, that must help. And do you have a lot of visitors? Because you’ve got such a great visitor centre here. After all, at it's base Doocot has been made using the same spirit and wood mixture as Dream to Dram but, like a fine wine or cheese, it has matured into a more rounded and complex expression.
